What is a perfect cup of coffee?  A question we ask this amazing barista who is also a great Pizzaiolo. Without much hesitation he says “it depends”.  He then proceeds to make us a few cups, some he throws away and says these are few seconds late on the drippings. Finally he hands us a great looking cup and casually says “ it depends on each drinker”.

Each coffee drinker prefers different tastes so there is actually no perfect cup for all, he concludes. That is actually quite a statement coming from a man who probably spends thousands of hours studying about the triumphs and flaws of coffee making.

So why does any barista go into all the troubles of trying to make a great coffee when he/she knows that not very one is going to like what they make.

Well we think the great barista are plainly doing it for the challenge..a challenge of meeting a great cup of coffee with the privilege one at that exact moment in time. Which in a perfect and the romantically world is a supreme unification of the coffee, the barista and the drinker, which finally and at last..can become one.

So the lesson we learn that day was: Should we not take an attitude of a great barista when it comes to our determinations and efforts of doing things. But most of all,the lesson was, to try to aim for grace and harmony of things rather than just for the pride and the applaud.
